To begin making the Spicy Raw Jackfruit Curry, first cut the raw jackfruit, to do that we have to first grease our hands and the knife that we are going to use with oil.
Keep a bowl of salt water aside to soak the chopped raw jackfruit pieces to avoid the discolouration of the fruit.
Now chop the jackfruit in half, remove the skin and cut it into the 1 inch pieces and soak them into the salted water.
First of all pan fry the Ingredients to make the curry masala by adding some oil. Firstly fry the chopped onions to light brown colour. Then pan fry the khada masalas(5Black Pepper, 1 Bay Leaf, 1 Cinnamon, 1 Masala Cardamon, 1 Star Anise, 1Blackstone Flower) with ½ teaspoon of oil.
Now roast the dry coconut to the golden brown colour. Then roast the Poppy seeds(khuskhus) slightly and remove from flame.
Grind the all pan fried ingredients into the smooth paste. This is our curry masala, which can be used in any spicy curry or dish.
As the RawJackfruit is hard we fry it first. For that take a kadhai, add 2 teaspoon of oil and chopped Raw Jackfruit in it. Fry it for 10 min.
Heat 2tbsp of oil in a kadhai, add 1tsp of mustard seeds and 1tsp of cumin seeds till it crackles, then add the curry masala paste into it and cook for 10 mins. Mean while boil some water in an utensil into add it to the curry later.
After 10 min add ginger garlic paste into the kadhai along with 1tbsp of cumin powder and 1tbsp of coriander powder, and mix well. Then add 1tbsp of green chilli paste and cook for 2 mins.
Now add 3tbsp of red chilli powder and 1tsp of turmeric powder and mix well. Cook it till the gravy start to leave oil in the kadhai. Now add salt to the gravy as per taste. And add the fried Raw Jackfruit into the kadhai, mix it and cook for 5 mins.
Now add 2 cups of boiled water into the gravy, mix well and cook for 10 mins with covered lid. Check the softness of Jackfruit after 10 mins, if it is soften well cook the gravy for 2 more mins and turn off flame.
Garnish the curry with the chopped coriander and serve hot. It can be served with Bhakris/Chapatis/Parathas or Rice along with Salads or Raitas.
